Serves 2
- 1/2 cup arborio rice
- 1/3 cup low-fat canned coconut milk
- 3/4 cup water
- 1/4 tsp sea salt
Directions
- Rinse and drain rice, then place in a small saucepan with coconut milk, water and salt.
- Heat over high until the ingredients come to a boil.
- Stir, then reduce the heat to very low. Cover with lid and cook for 20 minutes.
- Check the rice to make sure that most of the liquid is absorbed by the rice (cook more if necessary), then remove the pot from heat. Let stand for about 10 minutes, then fluff and serve!
